Jasper Hill's Harbison Mini (5 OZs)

A wee version of their Best in Show winner, Harbison—a spreadable bloomy-rind cheese wrapped in spruce bark, made by Jasper Hill Farm. These miniature wheels are 5 ounces - about half the size of their regular Harbison. These mini packages of Harbison deliciousness are in and out of fridge quicker than we can stock them and we love to share them with friends, family and colleagues. 

Harbison is a soft-ripened cheese with a rustic, bloomy rind, made by Jasper Hill Farm and named after Anne Harbison, the grandmother of Greensboro, who had a historic impact on Vermont's cheese community.

Young cheeses are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the farm's woodlands. Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. There is a natural blue green flora present on the spruce cambium.  

Winner of ‘Best in Show’ at the American Cheese Society Conference in 2018 and 'Best American Cheese' at the World Cheese Awards in 2015 and again in 2016.

About Jasper Hill

Jasper Hill is a working dairy farm with an on-site creamery in the Northeast Kingdom of Vermont. An underground aging facility maximizes the potential of cheeses made by the creamery, as well as those made by other local producers. Leftover whey from the cheesemaking process is fed to heritage breed pigs, roaming the woodlands beyond the cows' pasture. One of our absolute favorite cheese makers in the world!
