Perfectly Cooked Cast Iron NY Strip

Featured Cut: NY Strip

Ingredients: 

  • 1 Vermont Wagyu NY Strip Steak
  • Kosher Salt
  • Freshly Cracked Black Pepper

 

To Make:

  1. Thaw your NY Strip. Once steak is no longer frozen, remove packaging, dry steak and let come to room temperature on a paper towel-lined plate, about 30-60 minutes.
  2. Once steak is thawed, preheat your oven to 400° and place a seasoned cast iron skillet on the stove over high heat.
  3. When skillet begins to smoke (5-7 minutes), pat the NY Strip dry once more, season generously with salt and pepper on both sides, and place in skillet. 
  4. Allow the steak to sear on one side for 2-3 minutes until a golden brown crust forms. Using tongs, flip the steak and sear the second side for another 2-3 minutes.
  5.  Transfer the skillet to the preheated oven and let roast for 4-7 minutes for medium, or use a digital thermometer and cook until your desired temperature is reached. 
  6. Remove the skillet from oven, transfer the steak to a plate and tent loosely with foil for 5-8 minutes, allowing the steak to rest.
  7. Slice and serve.
